Daarnaast waren we verrast door de originaliteit en de snelheid waarmee de gerechten uit de keuken kwamen. Minder blij waren we met de relatief kleine porties. Het dieptepunt hierbij was het soepje van rode kool met olijf en zeevenkel. Onze verbazing was groot toen we doorkregen dat dit de 2e gang was en niet een verlate amuse of soort van palate cleanser.
Zeker omdat er relatief goedkope ingredienten worden gebruikt kan het niet de bedoeling zijn dat gasten met honger naar huis gaan bij een 6-gangen menu. We geven voor het eten daarom slechts 3 sterren. Verder staan er prima wijnen op de kaart maar deze zijn grotendeels ook verkrijgbaar bij De Gouden Ton. Iets meer originaliteit zou het restaurant sieren. Een andere minpuntje: de auto's die met hun lampen naar binnen schijnen en met regelmaat gasten verblinden.

De ingredienten die werden genoemd bij de gerechten waren helaas niet te begrijpen met al die Engelse namen. Jammer! Maar personeelstekort is waarschijnlijk de oorzaak. De muziek was een beetje nikszeggend, een beetje bonkend geluid af en toe. Liever wat klassiek muziek of helemaal geen muziek. Wat is dat toch, waarom moet er altijd muziek zijn....?? Het geluid van het publiek is toch gezellig genoeg? We kennen genoeg restaurants waar geen muziek is. Niks mindere sfeer of gezelligheid hoor... Enfin, het was een geslaagde avond bij Publique.

Leuke ambience, heel sfeervol. Goeie en vriendelijke bediening, die echt de tijd nemen gerechten en wine pairings toe te lichten. Eten was top, bijzondere smaak-combinaties
